Modica PGI Ginger and Lemon chocolate, created by Antica Dolceria RIZZA, is made in the baroque heart of Modica and embodies the ancient cold-processing method, which does not involve conching or the addition of cocoa butter. This unique technique best preserves the natural aromas and properties of cocoa, giving the bar its characteristic opaque, shiny appearance and a grainy, crumbly texture, a true symbol of Modica's identity.

Made with essential ingredients—bitter cocoa paste and sugar—and a minimum cocoa content of 60%, it is enriched with 8% lemon zest and 1.4% ginger. The bite is bold and aromatic: the intensity of the dark cocoa is illuminated by fresh and slightly bitter notes of citrus, followed by spicy and lively accents of ginger, which balance the sweetness of the sugar and give a persistent, fine and surprisingly balanced finish.

Nutritionally, 100 g provides 2131 kJ / 511 kcal, 28.8 g fat (17.7 g saturated), 50.2 g carbohydrates (41.9 g sugars), 9.6 g fiber and 7.9 g protein, with 0 g salt. A perfect tasting chocolate on its own or paired with aromatic teas, candied citrus fruits, light spirits and spicy infusions. May contain traces of nuts (almond, hazelnut, pistachio), but remains minimalist in spirit, expressive in flavor and authentic in its tale of the territory.
