Mate is known as yerba mate or maté, and is a traditional South American drink, widespread in Argentina, Uruguay, Paraguay, Chile and southern Brazil. It is consumed throughout the day, especially in Argentina and southern Brazil, using a container in the shape of a hollowed-out gourd, the calabash, which recalls the ancient gourds where the mate leaves were infused. To answer the question what herb is in mate, this drink is produced from the dried leaves of the Ilex Paraguariensis plant, which belongs to the holly family and growsIt grew spontaneously in the mountains of Paraguay. Historically, it is also known as “Jesuit tea” because in a historical period the plant was cultivated by this religious order, present in South America since the first colonization. They observed that the Guaraní natives, in what is now Paraguay, drank this infusion to combat hunger and tiredness; for this reason, the Jesuits tried to cultivate the plants and export the leaves to compete with English tea. Also in this period, the name mate was born from the local word matì, which indicated hollowed out pumpkins. The mate leaves were steeped in hot water, similar to tea or herbal teas, in the. The infusion was consumed with a bombilla, a straw with a filter that separates the leaves from the liquor. Today, pumpkin-shaped containers made of other materials, such as ceramic, are mainly used. What does mate taste like? It depends on the processing. Generally the leaves have a bitter taste with astringent notes, due to tannins, but the taste of mate could vary through a seasoning process (used in Paraguay), burning over a fire or simply by drying in the open air.
The version of green mate, very popular in Brazil, comes from a method of processing the leaves that involves drying them with hot air, to block the oxidation process (fermentation) and make the yerba mate immediately available with its intense green color, the vegetal taste of cut grass.
Toasted mate, on the other hand, comes from the traditional short toasting (a few seconds) of the leaves on a special hearth, widely used in Argentina. The yerba mate thus loses humidity and absorbs dry, bitter notes, reminiscent of cereal coffee and which reveals a mate with a slightly smoky aroma. In our proposal, the combination of these two versions gives a complex flavor and rich aromas, perfect for blending with orange and licorice.
Since it contains caffeine, consuming mate is not recommended for children, during pregnancy and breastfeeding, and for people sensitive to caffeine. It could trigger unwanted effects, especially in cases of irritable bowel syndrome, high blood pressure; it can cause nausea, diarrhea, accelerated heartbeat, stomach pain. With respect to how many times a day to drink mate, the ideal would be not to exceed 1-2 cups a day, keeping the quantities of caffeine not harmful.
