Gummy licorice strings are a classic among sweets made with licorice extract, that is, those sweets that are not made of pure licorice but whose main component in determining the flavor is licorice extract. Licorice, which would actually be more correct to always call licorice extract, is a plant extract obtained by boiling the underground part of the stem of a plant (rhizome) known by the common name of licorice and whose scientific name is Glycyrrhiza glabra.

The plant from which licorice is obtained

Glycyrrhiza glabra is a perennial herbaceous plant that usually grows up to one meter in height, belonging to the Fabaceae family (or legumes), native to the Mediterranean basin and the Near East, known to humanity for thousands of years and considered one of the very first aromatic plants discovered. Both the ancient Greeks and the Chinese prescribed it as a remedy for coughs, but also as a digestive and tonic (even for problems in the sexual sphere). One of the effects of licorice proven by modern science is notoriously that of raising blood pressure, which can certainly be a disadvantage in case of prolonged use but can also serve as a remedy in case of sudden drops in blood pressure and consequent fainting.

Taste and consistency of licorice laces

The flavor of licorice is sweet at first impact (in fact the sweetening power is superior to that of sucrose) followed by a slightly bitter and acidic aftertaste, licorice certainly has a strong flavor. Given the above, it is easy to imagine who will be the admirers of licorice laces, all those who at the taste of licorice say: "yes but in moderation!". Even the characteristic of rubberiness, however, which is not typical of pure licorice products, could be another reason that pushes one to prefer products such as licorice laces. Finally, but take this with a pinch of salt and check, even if you are worried about blood pressure, a product like this in which licorice extract is only one of the ingredients could be less important in terms of influencing blood pressure levels than pure licorice, but not knowing exactly how much there is in reality, one should always proceed with caution.
