Cherry honey is a fairly rare honey, much appreciated for its sweet flavor with a slightly bitter aftertaste and an aroma that recalls the smell of Rosaceae flowers.

Characteristics of cherry honey

Cherry honey is very liquid and has a light amber color, in some cases slightly darker with reddish hues. Crystallization, which is quite slow, transforms it into a pasty mass of white-gray color with fine crystals. The smell is that of the plant from which it derives or at least recalls the aroma of most of the flowers of the Rosaceae family, of which the cherry tree is part, like a good part of the main fruit plants. The flavor is quite sweet but with a slight bitter aftertaste, like almonds (almonds are also Rosaceae). We anticipated that this is a fairly rare honey, in reality more than rare we should say that obtaining a true monofloral honey derived from cherry nectar that is pure presents difficulties. Not because the cherry tree is a very rare plant, but because of the moment in which it blooms, as we know the cherry blossoming is among the earliest in spring, in that same period there is an explosion of other plants too, however, the bees for their part come out of winter and throw themselves into frenetic activity, but a good part of the honey produced in this phase is used for their survival. All this translates into the fact that a pure monofloral cherry honey will be obtained only in those regions where there is extensive cultivation of this plant. As for its use in cooking, being a rather sweet honey, it lends itself to being consumed plain on a slice of bread, to being used as a sweetener in drinks instead of sugar, to being paired with sweet cheeses, but also to be corrected with sour yogurt.

Beneficial properties of cherry honey

The beneficial properties traditionally attributed to cherry honey are all those generally attributed to honey: antioxidant properties, energetic properties, against seasonal ailments, etc. We do not have any specific studies but based on the general rules that we have learned, such as: the darker the honey, the richer it is in flavonoids (antioxidants) or such as: slow crystallization means more fructose and less glucose, we can assume that cherry honey, which has a high calorific value, therefore it is excellent as a source of energy, also has a high sweetening power (it has a high percentage of fructose since it crystallizes slowly) so less of it can be used to sweeten drinks. As for the antioxidant content, based on the color, it may not be as high as in chestnut honey but it should still be remarkable.
