Characteristics of lemon honey

Let's start with the appearance: lemon honey in the liquid state is usually very clear, even in some cases almost colorless or a very pale straw yellow. After crystallization the color turns towards pearly white or beige. The grain of crystallized lemon honey is rather fine. As for aroma and taste, lemon honey, like all citrus honeys, has a fruity and citrusy flavor but overall quite delicate and decidedly sweet, so much so that it is recommended as a honey to be consumed alone for breakfast, perhaps on a slice of toast and as an alternative sweetener to sugar for tea and herbal teas. The scent is similar to that of the orange blossoms from which it comes (orange blossoms are the flowers of the lemon, orange and bergamot).

Beneficial properties of lemon honey

First of all, those common to all honeys, that is, the energy supply and the restorative effect useful in preventing seasonal ailments or in recovering from them. . Hesperidin is mainly present in the peel and pulp of citrus fruits, but evidently also in the flowers from which the nectar and therefore the honey is obtained, so much so that the hesperidin content has been taken as one of the quality indicators of lemon honey.
