Sulla honey is a monofloral honey with a light, almost transparent color, which tends to white after crystallization. It has a delicate, sweet and slightly floral flavor, with a light and fresh aroma. Produced mainly in the regions of southern Italy, where the sulla plant flowers abundantly, it is appreciated for its lightness and digestibility. It is ideal for sweetening drinks without altering their flavor or to accompany yogurt and fresh fruit.

Sulla honey is a honey with a very delicate flavor and high sweetening power that usually has a very light color and a compact appearance because it crystallizes quickly.
First of all, what is sulla? It is a leguminous plant, related to broad beans and beans, it is used as fodder and produces large purple flowers. It blooms in the spring/summer months so it is not one of the earliest honeys. As mentioned, the honey, which in the liquid state has a straw yellow appearance, more commonly has a beige color tending towards white and a compact consistency that it takes on with crystallization because this happens very quickly. We have written in many other articles how crystallization is a completely natural phenomenon and how quickly and easily it occurs for different types of honey depends on the proportion between glucose and other types of sugars (essentially fructose), the more glucose there is, the more the honey will tend to crystallize. Sulla honey is very sweet, perhaps slightly less than acacia honey but definitely sweeter than citrus honey for example. It also has a very delicate flavor, so it sweetens but does not alter other flavors much if used in a preparation and in fact it is one of the most used honeys as an alternative sweetener in drinks and in the confectionery industry, for example in the preparation of nougat.
Sulla honey essentially has all the generic properties of honey without having any in a particularly marked way, so let's remember them: the energy intake (naturally since it is among the sweetest honeys it is among those with the highest caloric intake, therefore suitable for example for athletes), mild laxative action, moderate antibacterial and anti-inflammatory action (hence the soothing action of coughs and sore throats in seasonal ailments). The mineral salt content is certainly lower than that of other types of honey. Other uses such as cosmetics are made difficult by the tendency to crystallize, but precisely for this aspect some recommend sulla honey as an effective scrub.
