Forest honey is a very particular type of honey, also known as honeydew honey, it has an intense flavor and is less sweet than other types of honey.

Characteristics of forest honey

First of all, what is honeydew? Honeydew is a sticky sugary substance produced by some small insects (aphids) that feed on the sap of plants. In areas where the availability of flower nectar is very low, bees use it to produce honey. So it is not correct to say that honeydew honey is not produced by bees as you may read, it is honeydew that is produced by these small pest insects (and in some cases even honeydew itself has been used by humans as a food resource) but honeydew honey is simply produced by bees that do not have flower nectar available but have honeydew, just as is easy to happen in a forest. The very famous Black Forest honey is in fact a honeydew honey. The most obvious characteristic of forest honey is the color which is very dark, the consistency is quite dense but forest honey does not tend to crystallize, most likely due to the fact that it has a low glucose content. The flavor is decidedly not very sweet, in fact it is almost bitterish with hints that have been defined as earth and bark. According to some, it is a bit reminiscent of the flavor of a licorice stick or rhubarb. The aroma is fruity and relatively sweet and spicy, not pungent. Even in the kitchen, honeydew honey has various uses, essentially for those who do not like sweets too much it can be the right honey both to counterbalance the sweetness of ice cream and fruit salads, and in savory recipes that require honey, such as honey chicken, in the case in which in the sweet-savory contrast you want to "go easy" with the sweet component, for the same reason it can also be indicated for tasting with cheeses.

Beneficial properties of forest honey

The first use that comes to mind for forest honey is as an alternative sweetener for people who really have to avoid glucose because it has a lower glycemic index than other types of honey. Furthermore, it would seem not to escape the rule that we have stated several times: the darker the honey, the richer it is in antioxidants. Forest honey is particularly rich in them. It is also recommended as "honey for athletes" because in addition to still guaranteeing an important energy intake (although obviously less caloric than other types of honey) it is richer in mineral salts than other types of honey. Finally, it also has the typical other properties attributed to other types of honey such as antibacterial and soothing properties.
