Modica PGI carob chocolate, created by Antica Dolceria Rizza, is made in the historic, baroque heart of Modica, where the ancient cold-processing of chocolate is cherished as a defining art. This unique artisanal process, which involves no conching or the addition of cocoa butter, completely preserves the natural aromas of the bitter chocolate paste, restoring the famous grainy, opaque, shiny, and naturally crumbly texture. With a minimum cocoa content of 60%, the bar is enriched with carob, a symbol of Sicilian tradition, selected for its delicately sweet, toasted, and slightly caramelized aromatic profile.

On the palate, the deep character of the cocoa meets the soft nuances of the carob, reminiscent of sweet cocoa, and notes of light coffee and caramelized sugar, providing balance and an elegant persistence. A tasting chocolate dedicated to lovers of Mediterranean flavors, ideal on its own or paired with sweet wines, infusions, and aromatic desserts.
