Liquorice fish are among the most classic liquorice gummy candies. The candy was born in India in the fourth century and is nothing more than crystallized sugar with added flavorings.
Over the centuries, however, other substances began to be added to the sugar that favored the amalgamation and gave a different consistency, for example starches and gelatins.
In the West, sweets remained a luxury reserved for a very privileged few until the 19th century because sugar was an imported luxury good. Sugar is obtained from cane or beetroot, but cane only grows in the East while we learned to extract it efficiently from beetroot only at the end of the 18th century. Even with the availability of sugar, however, as long as the production process remained completely artisanal, the democratization that led to candy being consumed by all social classes and in large quantities by children could not be achieved. In the mid-19th century, two fundamental innovations arrived: a steam pot that rotates by itself (the melted sugar must be continuously stirred) and a press capable of simultaneously printing candy of different shapes and sizes.
Melted sugar? And yes, we said that candy is crystallized sugar, but what does that mean? If you heat sugar to a high temperature, over 130°C, it becomes liquid, when you let it cool it does not return to its previous state but undergoes a process called crystallization.
Modern gummy candies are an even more recent invention, the first producer was the German Hans Rieber in Bonn in 1922. Liquorice is a plant extract obtained from the rhizome (modified underground part of the stem) of a plant whose scientific name is Glycyrrhiza glabra, it is a perennial herbaceous plant of the Fabaceae family, i.e. related to peas and beans. When we talk about pure liquorice, the extract is in a solid state, but you can also obtain liquorice juice and for creations such as liquorice sweets that is usually used.
Numerous health benefits have been attributed to liquorice, some of which have been confirmed by modern science, for example liquorice is used in cough remedies. So true that it is a plant with real effects that also has a contraindication, in large doses taken for a prolonged time it can raise blood pressure.
A curiosity about the history of sweets is that when they were a rarity for a few, even the few wealthy privileged people who could afford them in the West made a different use of them, sweets were packaged essentially as remedies for common ailments such as cough and heartburn, in short the craftsmen packaged sweet confetti to enclose beneficial substances.
From this point of view, licorice gummies, given the benefits of licorice, reunite the gummy candies that as we have seen are relatively modern, born when sweets were already a sweet treat within everyone's reach, with the more ancient use of sweets.
