Coconut horchata: a refreshing and delicious coconut drink
If you love coconut, you absolutely must try this recipe! It’s literally a dessert you can drink.
Let’s take a look at the ingredients you’ll need and the steps to follow to make it at home.
For your homemade horchata de coco, you’ll need (the quantities given are enough for four servings):
- 1 litre of water
- 1/2 cup of rice
- 200 grams of unsweetened desiccated coconut
- 1 cinnamon stick
- 300 ml of evaporated milk
- Condensed milk (optional) Method
Rinse the rice thoroughly until the water runs clear, pour it into a sufficiently large bowl, add the cinnamon and leave it to soak for about 3 hours.
Method
Once the soaking time is up, the rice will be sufficiently hydrated. At this point, take your blender and pour in the rice, the evaporated milk, the coconut and half a litre of water. Blend everything until it reaches a smooth consistency.
Pour the mixture into a jug through a sieve and add the second half litre of water. Stir well and serve over ice, finishing with an extra sprinkling of cinnamon.
As well as cinnamon, some people also add a vanilla pod. For an even thicker and creamier result, you can add cream or condensed milk.
The grated coconut can also be replaced with 200–250ml of coconut milk, which you can also use as a substitute for evaporated milk (which you can also replace with almond milk)
What is evaporated milk?
Haven’t you heard of it before? It’s a product similar to condensed milk, but unsweetened, obtained by evaporating up to 60 per cent of the water contained in the milk. It’s fairly easy to find in shops, but you can also make it at home by gently heating the milk over a low heat for about 60–90 minutes (one litre of milk will yield about 400ml of evaporated milk).
