
How to make a watermelon iced latte
Let's start with the most unusual one, the one with a touch of espresso, made particularly famous by the Zus coffee shop chain that is very popular in Thailand. The combination of watermelon coffee might make espresso purists “turn their noses up at it,” but we like to try and propose things that are new and a bit outside the box. Let's see how to prepare a healthy, additive- and dye-free version of the famous Thai Watermelon Iced Latte Espresso at home. You will need 150ml hot water, green tea (some recommend jasmine flower tea), a cup of espresso, 50 grams of dehydrated watermelon, brown sugar, your favorite milk (animal or vegetable). Use the blender to blend your dehydrated watermelon until you get a fine powder (the original recipe calls for using ready-made watermelon powder but we prefer to use the natural dehydrated one).

If the watemelon iced espresso latte didn't win you over, the matcha tea version may have some hope for you; you'll get a fresh, fruity and mild-tasting drink. In this case, to achieve a thick and creamy consistency, we recommend using lightly iced diced watermelon. In addition to watermelon (about 125 g) you will need: 2 tablespoons of matcha tea, 120ml hot water, 60 ml milk (animal or vegetable), ice to taste.
Preparing the watermelon matcha latte: Brew the matcha tea and let it cool slightly to room temperature. Meanwhile, mash the watermelon cubes until smooth and pour it into the bottom of a sufficiently large glass (choose a size suitable for a smoothie or milkshake). Add the ice and milk. Pour the matcha tea into the glass and stir gently before enjoying. If you do not have matcha tea on hand, you can also use classic green leaf tea; the drink will still have a pleasant, mild taste, ideal on a hot summer afternoon.
