Lozijon: the spicy Uzbek garlic sauce

We like to experiment with new flavours, which is why from time to time we dedicate a space in our blog to dishes and sauces belonging to gastronomic traditions far removed from our own. Today, we thought we would introduce you to lozijon, a spicy sauce typical of Uzbek cuisine. Let's take a look at how it is prepared and what to pair it with.

If you are not a fan of garlic and spiciness, this is not the sauce for you. The recipe is really very simple, with just a few tasty ingredients. To prepare it, you will need:

  • 200 grams of garlic (in whole cloves)
  • half a tablespoon of ground red chilli pepper
  • 50 grams of seed oil or extra virgin olive oil
  • 5-6 cloves
  • fresh coriander (optional)

Preparing the garlic sauce


Clean the garlic cloves and chop them finely. Pour the oil into a non-stick frying pan and heat it up but without boiling. Add the garlic, chopped cloves and let it cook on a low flame with a lid for about five minutes, paying attention to the colour of the garlic, it should not turn golden.
Once the cooking is complete, remove the pan from the heat and add the chopped chilli pepper. To mix everything together better, you can process the mixture with a blender.
Add the cilantro (if you decide to use it) at the end of the preparation.
Let your sauce cool and season.
The homemade logijzon can be stored for a few days in

In Uzbek cuisine, lojizon is usually paired with meat or fish dishes, but we recommend you also try it with grilled vegetables and roasted bread.
