Homemade flavored red wine salt

Have you ever tried salt flavored with red or white wine? A combination much appreciated and used in Iberian cuisine. Let's see together how to prepare it....Wine flavored salt is particularly suitable for flavoring roasted and grilled meats, flavored with herbs such as rosemary, thyme, sage and more.

Salt flavored with red wine

To prepare your homemade seasoning you will first need a good coarse whole sea salt (it is also worth trying it with Guerande salt), 500 g in total.
In addition to salt you will need:
1 large glass full of red wine
8 sprigs of fresh rosemary (or alternatively thyme or sage)
a medium-sized fine mesh strainer
a baking tray lined with baking paper.

Method:

Divide the salt into two equal parts of 250g and pour the first part into the glass with the wine and add one or two sprigs of rosemary. Let it rest for at least two hours (the operation must be repeated with the remaining salt).
Pour the salt into the strainer, placed over a bowl to drain the residual wine.
Transfer the salt onto the baking paper in the pan, and add the rest of the rosemary, before baking everything at 50° until the salt is dry and the rosemary is toasted.
Crush the salt and aromatic herbs using a food processor or pestle before transferring it to an airtight glass jar.

To prepare the flavored salt you can also use white wine, and perhaps combine instead of rosemary a mix of Provençal herbs with a delicate aroma.

Important note, pay attention to the doses, after the "bath" in the wine and the passage in the oven the flavor of your salt will be accentuated compared to the starting levels. Be careful not to overdo it.
