Origins and history:
Thyme is the botanically known plant with the name of Thymus vulgaris, also known as erbuccia or sermollo, and it is a spice that together with savory, rosemary and sage helps to perfume the Mediterranean scrub. Always appreciated in the kitchen both for the taste and for the digestive and antiseptic properties conducive to the conservation of the meats. When there were no refrigerators, thyme was used for food preservation, given the significant presence of essential oil with anti-fouling action.
