Yerba mate is a popular drink in Central and South America, appreciated for its stimulating and energizing properties. First of all, the infusion contains a large amount of natural caffeine, similar to that of coffee. However, to understand how much caffeine mate has, consider that it is released more constantly than that of coffee.
One reason to drink mate, in fact, is to not suffer the effects too exciting and fast of coffee: you do not find the nervousness related to coffee, and the effect of mate lasts a long time. For these reasons, mate is excellent if you need a boost and energy or long-term resistance, as a tonic (against physical and mental fatigue). Yerba mate is used to exploit its stimulating principles in sports performance, to improve attention and concentration.
In addition to being an excellent alternative to coffee, mate also has benefits in terms of nutrients. It contains vitamins C and E and minerals such as selenium and zinc. How to take mate?

The yerba mate drink can be prepared like a normal tea, a classic preparation in a cup, for those who do not have a bombilla and a calabash. Leave the leaves to infuse in boiling water, filtering the liquid immediately afterwards. To prepare mango mate, place about 3-5 grams of the mixture in a cup (250 ml). Heat the water to 80° C and then pour it into the cup. The infusion should last 8 to 10 minutes. Those who want to prepare the Mate ritual, immerse the hot water in the calabash together with the dried Yerba Mate leaves for 3/4 of the container. Sip with the straw equipped with a filter, the bombilla. Once the water is absorbed by the leaves, it is poured back hot into the calabash, which maintains the liquid and the temperature.

Where does mate come from

Yerba mate is a drink from Central and South America, especially popular in Argentina, Uruguay, Paraguay, Chile and southern Brazil. It comes from the dried leaves of the Ilex Paraguariensis plant, which belongs to the holly family. Traditionally, the leaves are infused in hot water, in a process similar to tea, passed through a typical hollowed-out calabash. The infusion was consumed with a bombilla, a straw with a filter that separates the leaves from the liquor. Today, pumpkin-shaped containers made of other materials, such as ceramic, are mainly used.
What does mate taste like? It is generally bitter and has astringent notes, due to the tannins present in the leaves. It is influenced both by the ingredients included in the package along with the dried leaves (as in mango mate), but also by the production method. Traditionally, yerba mate is dried in a “pit” for roasting, using smoke; then it is aged for several months,obtaining an intense flavour with smoky notes. However, the processing methods can be different and today even hot air dryers are used, without smoke, as in Paraguayan yerba mate. Some varieties of Brazilian mate are also air dried, while Argentinean yerba mate is often exposed to the flames of the fire for a short time.
Our Brazilian yerba mate, used for mango mate, is part of a tradition that is widespread almost only in the south of the country, where it is mainly drunk cold, with ice cubes or iced water – the fresh version is called tereré. Brazilian green mate is usually not aged, so that the intense green colour of the leaves, the delicate flavour, the fresh aroma are maintained. For this reason, its intense flavour is often softened, combining it with other aromatic ingredients or additives, preferably natural (fruit, edible flowers, spices, etc.). The so-called compound is created, which often contains mint, lemon, guarana or other original elements.

When not to drink mate?

This drink contains caffeine, so its consumption is not recommended for children, during pregnancy and breastfeeding, and for people sensitive to caffeine. It could cause side effects, especially in cases of irritable bowel syndrome, high blood pressure, glaucoma; it can cause nausea, diarrhea, accelerated heartbeat, stomach pain. With respect to how many times you can drink mate a day, the ideal would be not to exceed 1-2 cups a day, to maintain non-harmful amounts of caffeine.
