Italian strawberry tree honey is a rare and prized product, typical of the Mediterranean regions, especially Sardinia. It has a dark amber color and a unique taste, distinctly bitter and intense, with hints of aromatic herbs and undergrowth. Its production is limited, as it depends on the flowering of the strawberry tree, a plant that flowers late in autumn. It is appreciated for its antioxidant properties and its complex flavor, often used in culinary combinations with aged cheeses or gourmet dishes.

Strawberry tree honey is obtained from the nectar of a typical Mediterranean plant that flowers in winter, we will see the consequences later, it has a bitter and astringent taste, it is definitely a type for amateurs who know what they want.
Since the strawberry tree is a plant (of the Ericaceae family) that flowers in winter, it follows that honey will be produced only where the climate is mild enough in winter to allow bees to work, in Italy most of the production comes from Sardinia. The limited availability naturally means that it is more expensive than other types of honey. From the point of view of the characteristics with which it presents itself: the color in the liquid state is dark, amber; crystallization is rather fast and the color it takes on ranges from deep hazelnut to amber. The aroma is pungent, it tastes of ivy according to some, and bitter, like coffee grounds. The flavor is similar, bitter we said, pungent, but not spicy, certainly a honey for connoisseurs. Pairings in the kitchen can go by analogy or contrast, so it could be paired with bitter vegetables but also with sweet cheeses. In Sicily it is used to make a particular nougat.
Speaking of the beneficial properties of strawberry tree honey, the same argument is always made for any other food product, we must distinguish between those attributed by polar tradition, those among these that would seem to be confirmed and those that to some extent have been scientifically confirmed, then there are those deduced as probable from the contents. For example, we have written about other honeys that usually the darker color is associated with a higher content of antioxidants (especially flavonoids) this seems to be confirmed in strawberry tree honey which as we said is dark and rich in antioxidants. Popular tradition instead associates strawberry tree honey with astringent and anti-inflammatory properties for the urinary tract, here the matter becomes more uncertain, in reality these properties would seem to be effectively present in the strawberry tree, but the responsible would be a substance called arbutin which is present in the leaves, but to a minimal extent in the fruits and in fact in strawberry tree honey there would seem to be no trace of it. In conclusion, strawberry tree honey is probably among the most valid as an antioxidant and we could dare to say that it is confirmed by science, on the anti-inflammatory activity of the urinary tract however science does not confirm or deny. Speaking of science, there is a specific study on the beneficial properties of strawberry tree honey, but it must be said that it was carried out on a sample of five participants, not exactly statistically representative, the result however confirmed the improvement of the oxidative state and of some blood values (for example increase in serum ferritin).
