Chestnut honey is one of the darkest honeys, as we will see shortly, some of the properties of honey are linked to the color. The flavor is strong and relatively not very sweet. With an almost bitter aftertaste.

Characteristics of chestnut honey

We anticipated the characteristic brown color of chestnut honey, we were referring to honey in a liquid state, we usually also indicate the color that the different types of honey take on when they crystallize, in reality one of the peculiar characteristics of chestnut honey is that it tends not to crystallize and to maintain the liquid state. This is due to the fact that its fructose content is high, honey is essentially a mixture of different sugars, mainly fructose and glucose, the more the balance of the mixture is shifted towards glucose the faster the honey crystallizes and obviously vice versa the higher the fructose content the more it will tend to maintain the liquid state. We also anticipated that on the palate its main characteristic is having a strong and not very sweet taste, this means that its use as a sweetener as an alternative to sugar should definitely be reserved for other types of honey, on the contrary this characteristic makes it appreciated for even daring combinations that go beyond the field of sweets. For example, chestnut honey is one of the most recommended to taste with cheeses. Since chestnut flour has always been used in cooking, in the case of preparations based on chestnut flour it is possible to choose to add a drizzle of chestnut honey.

Beneficial properties of chestnut honey

Essentially the properties recognized in all mine we know are: anti-inflammatory and regenerating properties, antimicrobial action (which also promotes healing from wounds), energizing effect (naturally) and being an adjuvant in the fight against ailments typical of the winter season. However, we anticipated, coming to the specific properties of chestnut honey, that its dark color is linked to excelling in one of the aforementioned, in fact it is normally an indication of a higher content (compared to other honeys) of flavonoids and polyphenols (antioxidants) and therefore dark honeys, such as chestnut honey should excel for anti-inflammatory and regenerating properties which are those linked to the presence of antioxidants. For this reason, chestnut honey is also among the most suitable for skin care against pimples and acne.
