The Camellia sinensis plant is grown at an altitude of between 1,300 and 2,000 meters, with average temperatures between 12 and 23 °C. The plantations are in an ideal position to obtain a complex tea in terms of flavor, with a delicate aromatic profile. These characteristics arise both from the growing conditions and the processing.
The harvesting of the tips of the leaves and shoots is the first phase, followed by withering and natural drying in the sun, in order to reduce oxidation. Yunnan white tea has a large, light green leaf with silvery and tender tips. The result is a delicate and clean-tasting infusion, which can also be stored and aged.
How to make white tea?
To bring out the best in this Yunnan tea, it is necessary to use water at a temperature of about 75-80 °C. If the leaves are infused with water that is too hot, they can become bitter. Place about 3-5 grams of the mixture in a cup (250 ml) (strainer or infuser). Pour the water into the cup, leaving the infusion for 1 to 3 minutes - a short steeping time to preserve the flavor. Prepare the infusion with boiled water cooled to 75-80 degrees and leave to infuse for 1 to 3 minutes.
