Chia seeds: properties, benefits:
Chia seeds can be eaten raw, in fruit salad or salad. Or in cereals in the morning or with yogurt.
Chia seeds are naturally rich in minerals such as Manganese which prevents aging. Phosphorus and Calcium which strengthen teeth, bones and support the immune system; Copper and Iron which contribute to the formation of hemoglobin (a protein specialized in carrying oxygen in the blood).
Strengthens nails and hair; Selenium, a natural antioxidant that works in synergy with Vitamin E, counteracting free radicals. Chia seeds are suitable for those who want to lose weight and are a rich source of dietary fiber, especially soluble fiber, that is, fiber that nourishes the intestinal bacterial flora and regulates the intestine, therefore suitable for both constipation and diarrhea.
Origins and historical notes:
These are seeds linked to a flowering plant native to Guatemala and central and southern Mexico, where it has been known for thousands of years.
The term "chia" can be translated with the adjective "oily". According to some written testimonies, this shrub was already known to the Aztecs and the Mayans, even before the discovery of America by Christopher Columbus.
The seeds obtained from this plant species were very important for the local population, especially for typical preparations such as a drink called pinole, obtained with the addition of mixed toasted chia and corn flours, and in fact the fame of the seeds was equivalent to that of corn, amaranth, and beans.
For this reason, Chia seeds were an important product in the diet of the populations of South America, who used them as the main source of vegetable fats. Their beneficial properties were said to be so many, that it is said that the Aztec warriors used them as a natural remedy against skin infections and inflammation, against pain, but above all as a powerful tonic capable of giving strength and vigor before and during battles. Another curiosity links Chia seeds to a modern Mexican state, Chiapas. This name would in fact derive from the Nahuatl: "chia river".
Use in cooking: summer salad with lettuce, carrots and soy sprouts, ingredients: 120 g of lettuce 80 g of soy sprouts 2 carrots 12 radishes 50 g of black olives pumpkin seeds, chia seeds sunflower seeds.
PREPARATION: Steam the carrots cut into pieces until they become tender. Wash well and cut the radishes into pieces. Wash and dry the lettuce and soy sprouts. Combine the lettuce, soy sprouts, radishes and carrots in a salad bowl. Season to taste with oil, salt and lemon juice. After sprinkling everything with pumpkin seeds, chia seeds and sunflower seeds, serve.
